Protein packed cookie dough bars

RECIPE:  Protein packed chickpea chocolate chip “cookie dough” bars!

*vegan, paleo, gluten free, dairy free
Here’s what you’ll need:
8×8 baking pan or round pie pan, food process or vitamix high speed blender
1 can of garbanzo beans, aka chickpeas. (YES, this is the secret protein-packed ingredient!) – drained and rinsed!
3/4 tsp baking powder
1/4 tsp baking soda
1/8 tsp sea salt
1/3 c amber agave nectar
1/4 c raw coconut sugar
1 1/2 tsp organic vanilla extract
1/4 tsp organic almond extract
1/4 c organic ground flaxmeal
1/4 c nut butter – I used 1/8 almond, 1/8 peanut
1/4 cup dairy free egg free gluten free soy free chocolate chips (found at health food stores!)
1/4 c pecans (optional)
(note we actually doubled this recipe and made a big batch because we love it so much! i suggest doubling because you WILL love it and you WILL want to share with friends!)
Instructions:
Preheat oven to 350 degrees.
Mix everything minus the optional ingredients (chocolate and nuts) in the food processor or blender (FP works better!). If you are using a blender, make sure to use a spatula to really stir the mixture. Add chocolate chips and/or nuts and hand stir them in after you process all the other ingredients. Grease pan (I use coconut oil) and pour mixture into pan. You can add additional chocolate chips on top if you want.
Bake for 30 minutes and let sit. If they seem slightly underdone, good! That means you did it right. They will firm up some during cooling.

12 servings. 5g fat/150 cal/4g protein per bar!
